MARCH 27, 1986 -- RESTAURANT MANAGER FRANCO PREVEDELLO -- Franco Prevedello preparing menus for the Ontario pavilion's Trillium Restaurant at Expo '86. Mr. Prevedello, a native of northern Italy, studied at a famous hotel school at Stresa, then worked in Germany and Switzerland before coming to Canada as the chief steward on the ocean liner Hanseatic. It was destroyed by fire in New York in 1966, and he went on to be the assistant maitre d' in the Birch Room of the Ontario Pavilion at Expo '67. So in a sense he has come full circle, only this time he's in charge. "The offer to manage this restaurant was one I couldn't refuse," Mr. Prevedello said. "I had been working with the planners on the layout of the kitchen and the restaurant itself for a couple of years, so when I put in my bid to run it last spring and got the go-ahead last fall, I was prepared to spend all my time on it, even to the point of selling my latest restaurant, Pronto's."
